What Do 52 Months on the Lees Mean?
In the production of Metodo Classico, aging on the lees is the period when the wine rests in the bottle after the second fermentation. While for many quality sparkling wines this period hovers around 24 or 36 months, with Unique Limited Edition we chose to push beyond the threshold of four years.
During these 52 months, the yeasts slowly impart compounds to the wine that enrich its structure. This process, known as autolysis, is the secret behind the enveloping creaminess and evolved aromas that make great reserve wines so fascinating. It is a production choice that requires dedication, constant monitoring, and, above all, an absolutely exceptional starting raw material (our 2021 vintage), capable of supporting and enhancing such a long maturation.
Tasting Notes: A Sensory Experience
Pouring a glass of Unique 52 Months means embarking on a deep and satisfying sensory journey:
- Appearance: The color is a luminous and refined rosé, traversed by a very fine and unstoppable perlage, a visual testament to the long time spent on the lees.
