This is not just another sparkling wine. It’s a project. It is the result of over four years of patience, a Metodo Classico Rosé Brut that we crafted to be uncompromising: elegant, complex, and extraordinarily gastronomic.

But what does this all mean for your palate?

More Than a Wine, A Project: 52 Months and a Sharp Palate

When we decided to create this cuvée, we had one clear goal. We wanted a wine that spoke of purity, but also had the structure to stand up to fine dining. To achieve this, we focused on two fundamental choices.

1. What Does “52 Months on the Lees” Mean?

Such a long ageing period (nearly four and a half years in the bottle before disgorgement) is a rare and precious choice. During this time, the yeasts slowly break down, releasing compounds that profoundly enrich the wine.

  • Aromatic Complexity: Not just fruity notes. This process unlocks evolved aromas of fresh-baked bread crust, pastry, toasted almonds, and dark spices.
  • Palate Structure: The wine gains body, creaminess, and a perlage (the bubbles) that becomes exceptionally fine, silky, and almost imperceptible. It doesn’t “explode” in the mouth; it caresses it.

2. A “Sharp” Brut: The Choice for Purity

While this wine is technically a Brut, our stylistic choice was to use only the most minimal dosage.

Why? To avoid “masking” the incredible work that time and the lees have accomplished over 52 months. It is a choice for purity. By keeping the sugar level to a minimum, we enhance the wine’s vibrant acidity and crystalline minerality.

The result is a palate we describe as “sharp”: a wine that is direct, clean, and incredibly fresh, leaving the mouth completely revitalised and ready for another sip (or another bite).

A Gastronomic Rosé: Tasting Notes and Pairings

The combination of these two choices creates a true food wine, not just an aperitif.

The Portrait of Unique 52 Months: In the glass, it presents a captivating “rosa cipolla” (onion skin) colour, alive with elegant copper hues. The perlage is fine-beaded and persistent. On the nose, it is a journey of complexity: from small red berries, it moves to notes of pomegranate, then evolves into classic aromas of brioche, almonds, and a subtle, smoky trace.

On the palate, it strikes the perfect balance between elegance and structure. The attack is vertical and tense, driven by its vibrant acidity. But immediately following, the long ageing on the lees fills the mouth with an enveloping creaminess, finishing with a long, savoury, and persistent finale.

A wine this sharp and dry was born to cleanse the palate. It is the ideal partner for rich, fatty, or oily foods, as well as those with a hint of sweetness. Forget desserts (a Brut this tense should not be paired with sugar) and prepare to be bold.
